Dream Field，「夢想中的美好甜點」，由台中知名無菜單日本料理餐廳 Tsuyoshi 醞釀多時，料理長龔桓毅秉持著日本職人一絲不苟的精神，以飽含心意與技藝的創作理念，將自身逾 20 年在食藝旅程上的鑽研、橫跨日／中／西／法料理的探索，一點一滴凝練為唇齒間醇而不膩的甘甜。
翻轉傳統日本料理甜點不外乎紅豆湯、紫米羹的印象，主理人龔桓毅深信，甜點在餐桌上扮演的角色，和前菜、主食、配菜等其他菜品都同等重要——當舌尖因料理的刺激而疲乏，一道清新、無負擔的甜點，將如綿綿春雨般洗去紛雜，留下最純粹的味蕾體驗。
揉合侘寂美學的簡樸與深邃，汲取自然風貌、四季光陰、以及日常裡每個微小卻沉靜的瞬間為創作靈感，每道甜點皆褪去華麗張揚的造型，專注在細膩打磨層次豐富的工藝。醃漬，雕琢，研磨，揉攪，捆卷，烘烤，經由每道扎實的工法，將食材的天然風味巧妙淬鍊為輕盈餘韻，靈活調度著酸甜、鹹淡與焦香，賦予甜點樸實卻深具工藝內涵的性格，一如品牌名直白卻不簡單的語意。

Head chef Gong Huan‑yi, guided by the meticulous spirit of Japanese craftsmanship, pours over 20 years of culinary exploration across Japanese, Chinese, Western, and French cuisines into each refined dessert. The result: rich but never cloying sweetness that lingers delightfully on the palate.

Breaking away from the typical Japanese dessert clichés of red bean soup and purple rice pudding, Gong deeply believes that desserts hold the same importance at the table as appetizers, mains, and sides.
